- 1 rape cabeza y espina
- 1 cebolla muy grande

- 1 cdta sal

- Ponemos los ingredientes del fondo en una olla grande al fuego alto. Cuando empieza a hervir, quitamos la espuma y la echamos. Tapamos, bajamos el fuego a lento y dejamos una hora.
- A la hora colamos y ya tenemos el fondo listo. En una cacerola calentamos un poco de aceite y sellamos los trozos de bonito al fuego moderado. En cuanto hayan cambiado de color (pero siguen crudos por dentro, los sacamos y reservamos. Cortamos la cebolla, el pimiento y los dientes de ajo.
- En la misma cacerola, echamos un poco mas de aceite y pochamos la cebolla, pimienta y ajos a fuego moderado, removiendo de vez en cuando, durante diez minutos. Agregamos el caldo de pescado y subimos el fuego.
- Echamos los guisantes, un chorrito de vino blanco. Pelamos y cortamos los boniatos y los echamos también.
- Finalmente echamos el pimentón, el zumo de un limón, el perejil, las dos hojas de laurel y el tomate.
- Cuando está hirviendo tapamos y dejamos a fuego lento 10 minutos. Volvemos a los trozos de boniato y quitamos la piel. A los 10 minutos echamos los trozos a la cacerola.
- Dejamos 10 minutos mas a fuego moderado, ajustamos sal y pimienta y ¡Listo! Un guiso de pescado sano, ligero y super rico!!
