- PARA EL KIBBE:
- 1 kg zapallo (calabaza)
- 400 a 500 gr triguillo (trigo burgol fino)
- 3 huevos
- 1 puñado Perejil
- 2 cebollas medianas
- 1 pimiento rojo o verde
- 3 dientes ajo
- unas cuantas hojas Hierba buena
- A gusto Sal, pimienta y comino (muy poquito)
- PARA EL RELLENO:
- 1/2 atado acelga
- 1 y 1/2 cebolla
- 1/2 pimiento
- A gusto Sal, pimienta y nuez moscada
- 3 huevos duros
- A gusto Queso cremoso (OPCIONAL)

- Primero preparamos el RELLENO. Lavar bien las hojas de la acelga, cortar las pencas (la parte del 'tallo' de la hoja) y blanquearlas en agua hirviendo con sal. Luego blanquear la parte verde también cortada. Colocar todo en un colador y dejar que escurra. El blanqueo se hace durante 5 minutos para ablandar la verdura.
- Colocar los huevos a hervir. Una vez rehogada la cebollita con el pimiento, mezclarlo con la acelga. Picar los huevos duros y agregarlos. Mezclar bien. Condimentar con sal, pimienta y nuez moscada. RESERVAR. LISTO EL RELLENO.
- KIBBE: primero lavar el triguillo. En un recipiente colocamos el triguillo y abundante agua. Revolver con la mano. Dejar estacionar unos segundos (el agua se pondrá blanca) y volcar esa agua. Repetir este paso dos o tres veces. Escurrir y dejar un poco de agua para hidratarlo.
- Mientras se hidrata el triguillo, hervimos el zapallo (previamente lavado). Una vez que se cocino bien, lo colamos y dejamos que escurra.
- En el recipiente donde está el triguillo colocamos encima el zapallo ya escurrido, los huevos, la verdura picadita (cebolla, pimiento, ajo, perejil y hierbabuena) y comenzamos a mezclar con una cuchara o espumadera. La preparación va a quedar semi líquida (no se asusten por que esto se cocinara en el horno)
- Aceitar una fuente de horno, preferiblemente con borde alto. Colocar la mitad del preparado, luego acomodar con una cuchara el relleno de acelga, si se desea, agregar cubos de queso cremoso y cubrir con el resto de la preparación del kibbe. Marcar con un cuchillo rombos o cuadrados y llevar al horno hasta que se cocine. Servir y disfrutar en familia
- Así sale del horno, cocido. Se debe poner un rato en la parte baja del horno (comúnmente llamada parrilla) para que se termine de cocinar.
